Sometimes you come across recipes that instantly make you happy, and this is one of them. @lislovescooking made flatbreads with ricotta, smoked salmon and asparagus, and trust us: you'll want to try this. Fresh, creamy and crispy all at once, and ready to serve in no time. Perfect for a cosy lunch with friends or a midweek treat for yourself.

Ingredients:
6 flatbreads
250 grams smoked salmon
250 grams ricotta
400 grams green asparagus tips
½ lemon
1 tablespoon olive oil
Fresh dill
Fresh chives
Pistachios
Optional: a clove of garlic
Preparation:
Preheat the oven according to the instructions on the flatbread packaging and boil some water in a small pan.
Finely chop some fresh dill and chives to taste and crumble a good handful of pistachios.
Stir the ricotta and mix it with the olive oil, the zest and juice of half a lemon, fresh dill and some salt and pepper to taste. Optionally, you can also add a clove of garlic.
Remove the woody ends of the asparagus and cook the asparagus for about 5 minutes until al dente.
Meanwhile, bake the flatbreads.
Take a flatbread and spread the ricotta mixture on it. Top with some smoked salmon and a few asparagus spears.
Serve with chopped pistachios, fresh dill and chives.
