Summer is in full swing, the sun is shining, and the days are endlessly long. What could be better than enjoying a delicious, fresh salad on such a day? @lislovescooking has created the perfect summer recipe for these warm days. Think juicy watermelon combined with creamy feta - a perfect mix that instantly gives you a summer holiday feeling.
Preparation time: 20 minutes | 10-12 minutes baking
Ingredients for 2 to 3 people
Salad:
1/2 watermelon
1/3 cucumber
50 grams walnuts
75 grams feta
50 grams mixed salad greens
(approx.) 10 grams fresh basil
(approx.) 5 grams fresh mint
2 to 3 thick slices of (stale) bread
1 tbsp olive oil
Dressing:
1 tbsp olive oil
1/2 tbsp maple syrup/honey
Juice of half a lime
This is how you make it
Start by making the croutons. Preheat the oven or air fryer to 200 degrees. Cut the bread into pieces and mix with the olive oil and possibly some pepper and salt. Bake the croutons in the oven for 10 to 12 minutes until crispy or in the air fryer for 6 to 8 minutes and let them cool.
Meanwhile, cut the melon into pieces, slice the cucumber, finely chop the mint and basil, and crumble the walnuts and feta.
Mix all the ingredients for the dressing together and store in the fridge until ready to use.
When you're ready to eat, toss all the salad ingredients together and serve with the dressing.
